Here’s a simple potato recipe that goes great with all sorts of dishes, including eggs and bacon.
6 potatoes rinsed and diced
2-3 tsp dill (fresh or dried)
1 tsp garlic (fresh or dried)
1 tsp onion powder
1 tsp salt
Heat up your frying pan to medium low with the oil of your choice. You don’t need very much oil, just enough to coat the bottom. Combine all your ingredients and cover with a lid and cook until the potatoes are soft. Stir about every 5 minutes. It takes about 20 minutes to cook.
– Instead frying, bake covered at 375 for about 15 minutes, then uncover for the remaining time until potatoes are soft. If you want them a little crispier on top, broil on low and keep an eye on them so they don’t burn.
– Add fresh diced or minced onions
– Serve with a side of homemade honey mustard
