Chewy, peanut butter, chocolate chip cookies (Gluten-free)
I’m always looking for great baking recipes that don’t involve having to put together a “flour blend”. Not my cup of tea. So when I came across this recipe, I was super delighted!
Preheat your oven to 350.
1/4 cup butter (softened)
1/2 cup sugar
1/2 cup brown sugar
1 1/2 tsp. vanilla
1 1/4 tsp. baking soda
1/2 tsp cinnamon
1/2 tsp salt
pinch of nutmeg (not an essential ingredient, but adds a nice flavor)
1 cup peanut butter ( If you’re allergic to peanuts, try using a different nut butter such as almond)
3 cups gluten free quick oats
6 oz chocolate chips (I prefer the “enjoy life” brand)
1/2 cup finely chopped nuts (your choice)
1 1/2 TB honey
1. Cream your butter and 2 sugars together using an electric mixer, if you have one.
2. Add eggs, vanilla, baking soda, cinnamon, salt, and nutmeg.
3. Add peanut butter.
4. Add oats, chocolate chips, nuts and honey.
5. Drop a teaspoonful of dough onto a greased cookie sheet.
6. Bake about 8-10 minutes
This recipe is gluten-free, dairy-free, corn-free and can be altered to be peanut free as well.
