I must say this is one of my favorite guilty pleasures. Had I known how easy this is to make, I would’ve been enjoying it much sooner. And no joke, it tastes better than the original.
1 10 oz bag of enjoy life chocolate chips
1 tsp vanilla
1/4 cup butter (I prefer earth balance butter because it’s dairy free and there’s a soy free option)
1/2 cup, or so, Peanut Butter (optional)
Melt these ingredients together, either in the microwave, or in a double boiler, which is what I prefer.
Be careful not to overheat your chocolate mixture.
2 cups of a rice crispy type of cereal.
Make sure to check your ingredients to be sure it’s gluten free.
Stir everything together then pour into a greased 9×13 pan. Lightly bang the pan on the counter to help even out your chocolate, then place in the refrigerator. After about a half hour, take it out and cut your pieces, then place back in the fridge until it has completely cooled and hardened.
Variations: You could add nuts, dried fruit, or marshmallows.
