Buttercream Frosting

1/2 cup softened butter or shortening
2 cups (or there abouts) powdered sugar
1 TB vanilla
1 egg white (pasteurized)

Mix all of these ingredients together with a high speed mixer and mix on medium to medium-high speed until your frosting becomes light and fluffy. If you still have lumps in your frosting, add more powdered sugar.

  2. This sounds tasty, but since it calls for unsalted butter or shortening, for myself who also has to be soy free, here is something I found out. I had worried there was no hope of having delicious frosting like I grew up on since I have yet to find an unsalted butter that I can have and shortenings are made with vegetable oil (i.e. soy). I had almost given up all hope but one day I found a website that talked about using Coconut shortening…it works just as great as regular shorting, at least in my opinion. Plus the place I got it from didn’t charge an arm and a leg like I had expected. It was basically the same price I paid for regular shortening.
    Just a tip for all who can’t have soy. (Completely based on my opinion.) Clarification, this is coconut shortening not coconut oil. (Coconut oil however, is great if you add a little to your oil when making home made popcorn, makes it taste lite and airy.)
