These cookies are so easy to make, and are full of flavor, and soft and chewy.
Preheat oven to 350 degrees.
1/2 cup of unpacked brown sugar
1/2 cup of sugar
1/2 cup softened butter
1/2 tsp vanilla
1/2 cup chunky peanut butter (optional, but highly recommended)
1 cup almond flour
1/2 cup brown rice flour
2 TB tapioca starch
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1 1/2 cups gluten free quick oats
Mix all of these ingredients together, and then drop a teaspoon full on a greased cookie sheet and bake for about 9-12 minutes.
If you want to make these into oatmeal cream cookies, add buttercream frosting between two of the cookies. The buttercream frosting recipe is on my blog too!
