Energy Bars

If you’re looking for a healthy, great tasting snack, this is it. Making this takes minimal time and effort, which is perfect for those of us who seem to be on the go to an insane degree, or for those who would rather inflict themselves with many paper cuts than do anything that involves kitchen work. You know who you are.

I recommend using the most natural ingredients you can find. Try to avoid any nut butters that have added sugar, hydrogenated, or partially hydrogenated oils. Find dried fruit that doesn’t have preservatives, or sugar added. A great place to find food in it’s most natural state is a local health food store, or one of the large grocery stores known for selling “whole foods”. Did you notice what I did there?

All you need is your ingredients, a large saucepan, a wooden spatula, a rectangular glass pan and wax paper.

Ingredients:
3 Cups of Nut Butter (peanut, almond, cashew, etc. whatever you prefer)
1 Cup of Honey
2 Cups of Oatmeal (I prefer the GF quick oats)
2 Cups of Dried Fruit (I love using goji berries, when I can find them)
2 Cups of chopped nuts

Topping Suggestions:
Drizzle honey or coconut syrup on top
“Enjoy Life” miniature chocolate chips
Chia Seeds
Extra nuts
Shredded coconut
Crushed Espresso Beans

Directions:
Combine peanut butter and honey in a large sauce pan and warm it up until it’s thin and has a smooth consistency.  Do not over heat. Then mix in the remaining ingredients. Press into a wax paper lined pan, or even muffin pan liners if it’s easier for you.

I like to put mine in the fridge to cool down and then cut them into bars. Don’t forget to revisit your inner childhood and lick the pan and spoon. As you do, please take a pic and post your funny pictures here!
